Ingredients

  • 12 Idaho potatoes, boiled and mashed
  • 2 lbs. lump crabmeat
  • 2 quarts panko breadcrumbs, divided
  • Salt and pepper, to taste

Directions

  1. Combine mashed potatoes, crab meat and 1 Qt. breadcrumbs, mix thoroughly.
  2. Roll mixture into balls. Roll balls in remaining 1 Qt. breadcrumbs.
  3. Fry at 350°F until golden brown.
