  • 3O ea. Medium, Dry pack, Sea scallops, 5 pieces per person
  • 4 ea. fresh sweet corn, shucked & the kernels off the cobb
  • 1 ea. Idaho Russet Potato, Peeled, turned on a Benriner Spiral, deep fried, !Garnish
  • 2T rough chop leeks, white part only
  • 1C fresh morels
  • 2t fresh thyme
  • 1t fresh chopped garlic
  • 1T canola oil
  • 5T unsalted butter
  • 1C white wine
  • 2T diced onion
  • Salt & pepper to taste
  • 6ea. sprigs of fresh chervil
