- 3O ea. Medium, Dry pack, Sea scallops, 5 pieces per person
- 4 ea. fresh sweet corn, shucked & the kernels off the cobb
- 1 ea. Idaho Russet Potato, Peeled, turned on a Benriner Spiral, deep fried, !Garnish
- 2T rough chop leeks, white part only
- 1C fresh morels
- 2t fresh thyme
- 1t fresh chopped garlic
- 1T canola oil
- 5T unsalted butter
- 1C white wine
- 2T diced onion
- Salt & pepper to taste
- 6ea. sprigs of fresh chervil
