Ingredients

  • 5 pounds Mashed Potatoes
  • 1 pound Brie
  • 8ounces Boursin
  • As needed Egg wash
  • As needed Breadcrumbs

Directions

  1. Mix warm mashed potatoes with Brie and Boursin.
  2. Pipe into batonnets on a lined sheet pan and freeze.
  3. Dip croquettes into eggwash and breadcrumbs.
  4. Deep fry to set coating (about 1 minute).
  5. Thaw and fry to order.
