- 5 pounds Mashed Potatoes
- 1 pound Brie
- 8ounces Boursin
- As needed Egg wash
- As needed Breadcrumbs
- Mix warm mashed potatoes with Brie and Boursin.
- Pipe into batonnets on a lined sheet pan and freeze.
- Dip croquettes into eggwash and breadcrumbs.
- Deep fry to set coating (about 1 minute).
- Thaw and fry to order.
