Ingredients

  • 20 each Leftover baked potatoes
  • 1½ cups Olive oil
  • To taste Salt and pepper
  • ¼ cup ground rosemary
  • 1 T Paprika

Directions

  1. Quarter potatoes lengthwise, then cut into ¼” diamonds.
  2. Toss in oil with seasoning and spice and transfer to lined sheet pans.
  3. Oven roast 8 minutes at 375°.
  4. At time of service heat potatoes on flattop tossing occasionally for about 10 minutes.
