Rosemary Home Fry Potatoes

- 20 each Leftover baked potatoes
- 1½ cups Olive oil
- To taste Salt and pepper
- ¼ cup ground rosemary
- 1 T Paprika
- Quarter potatoes lengthwise, then cut into ¼” diamonds.
- Toss in oil with seasoning and spice and transfer to lined sheet pans.
- Oven roast 8 minutes at 375°.
- At time of service heat potatoes on flattop tossing occasionally for about 10 minutes.
