New Year's Eve Idaho® Potato Drop

It's going to be noisy in Boise for the 5th Annual New Year's Eve Idaho® Potato Drop. Start 2018 at one of the most 'spudtacular' parties in the country when a giant glowing potato drops in front of the Idaho State Capitol in Boise at midnight on December 31st. The festivities begin at 1PM and end at 1AM. Spend your evening eating, drinking, and dancing the night away. This year there are two major, must-see additions to the entertainment lineup. The first is the Big-Air Rail Jam, the first of its kind, cutting-edge snow park that combines crank pulleys, kickers, rails and a quarter pipe for some super frosty fun. The second is the Tuber Luge, a public high speed tube sled that is destined to add some adrenaline to your evening. A night sure to be full of fun the whole family can enjoy!

Ask Dr. Potato:  Do you have any suggestions for French fry dipping sauces?

A: Traditional dipping sauces for fries contain spices and mayonnaise. However, folks are getting more creative, using sour cream, Greek yogurt and event fruit or vegetable salsas as the base. Once the base is decided, the flavor combinations are endless. We've tried everything from mango, peach, lime pickle and Sriracha cream sauce to more upscale options like Béarnaise sauce, ethnic peanut Thai sauce or red curry. Regional dipping sauces, especially when paired with lobster, shrimp, or fish for a fish and chips entrée, usually include the classic Old Bay Seasoning. A few finger-licking-good dips to try are sweet chili, buffalo sauce, or cool and refreshing ranch. For something totally different, toss the fries, roasted potatoes, chips or tots in a coating of Calabrian Chile paste.
