A national survey conducted last month revealed smooth (not lumpy), buttery mashed potatoes are the overwhelming favorite flavor; good thing the Idaho Potato Commission has a crash course on how to prepare them! New Idaho Potato Commission Commercial

Mark The Farmer has been hunting the Big Idaho Potato Truck for years and he finally caught it…or did he? This 4-ton spud can produce 20,217 servings of mashed potatoes and 1,000,000 average-sized french fries. Safe to say the possibilities are endless with how to enjoy this tater, and Mark has been scoping out his celebration plans for quite some time.

Prepare this breakfast treat the night before and pop it in the oven while the kiddos are tearing through their gifts from Santa.

Crispy Cheesy Idaho® Potato Cakes

Keep this Crispy Cheesy Potato Cakes recipe handy for the next time you have leftover mashed potatoes. Combine the potatoes with bacon, green onions, cheese, dill, salt and pepper. Form into similar size discs, quickly dip in an egg wash and coat with bread crumbs. Pan fry four at a time over medium high until both sides are golden brown. While your cakes are crisping, combine salsa, sour cream, dill and green onions to make a delicious dipping sauce. Serve and enjoy your potato cakes while they’re hot!

Q: Do sprouts affect flavor?

A: No. And by the way, potatoes are safe to consume even if some sprouting is present, as long as the potato itself is firm to the touch. Remove and discard any sprouts, then prepare the potato as desired.
