Featured Farmer: Blake Matthews 

This month’s featured farmer is Blake Matthews from Oakley, Idaho. A fifth generation farmer, Blake and his wife Valeri have two sons and a daughter- Crew, Mason and Raegan. Blake loves being an Idaho® potato farmer because he feels there is no greater satisfaction than overseeing the growth of the Idaho® potato crop from seed to harvest. Blake believes the farm is the best place to learn the meaning of hard work and looks forward to passing valuable skills and knowledge to his children. His favorite way to eat Idaho® potatoes is fresh cut french fries. 

Idaho Potato Commission Teams Up with America's Got Talent Winner, Ventriloquist and Singer Darci Lynne in Honor of Potato Lover's Month

In celebration of Potato Lover’s Month, the Idaho Potato Commission (IPC) has partnered with America’s Got Talent winner, ventriloquist and singer, Darci Lynne! Check out Darci and her puppet Petunia having a short but fun conversation with the IPC’s mascot, Spuddy Buddy. The video is featured across Darci’s social channels all month long and can be viewed on the IPC YouTube page. There are few things sweeter than these cute puppets meeting for the first time!

Q: How do I keep shredded hash browns from turning dark? 

A: When potatoes are cut, exposure to air or oxygen causes them to darken. The simplest and most effective method to prevent discoloration is to place the shredded potatoes in water with concentrated lemon juice or white wine vinegar, using one teaspoon for every gallon of water.
