Featured Farmer: Eric Sutton

This month’s featured farmer is Eric Sutton from Rexburg, Idaho. A sixth generation farmer, Eric and his wife Andrea, have four daughters and a son - Dallas, Larkin, Tatum, Lexi and Larz. Eric enjoys being an Idaho® potato farmer because it allows him to cultivate a wholesome living and grow nutritious food for people. His favorite way to eat an Idaho® potato is baked.

Q: I cut too many potatoes! How long can they be kept covered in the refrigerator?

A: As long as the potatoes are submerged in a bowl of water with concentrated lemon juice or white wine vinegar and covered completely, they should be fine for a day or two.
