Aside from green beer and the festive parades across the country, March 17 is best known for the food that’s served in celebration of St. Patrick, the patron saint of Ireland. The most well-known and easiest to prepare dish is corned beef and cabbage…and potatoes. Add the ingredients to your slow cooker in the morning and by dinnertime you’ll be feasting like a true Irishman (or woman). Other popular favorites include hearty Irish Stew with large chunks of Idaho® potatoes and veggies simmered in beef broth with steak or lamb shoulder chops and we can’t forget the classic Shepherd’s Pie.

One-Pot Corned Beef Hash with
Idaho
® Potatoes

Feelin’ lucky? Maybe it’s because St. Patrick’s Day is Thursday! Digging into this One-Pot Corned Beef Hash with Potatoes is better than finding a pot o’ gold at the end of the rainbow. Reuben Irish Nachos

Grab the forks – you’re going need them for this platter of Reuben Irish Nachos! Sliced and roasted Idaho potatoes are topped with corned beef, sauerkraut, crumbled bacon, melted Swiss cheese and Thousand Island dressing. Pro tip: for crispier tater rounds, spread evenly, not overlapping, on a baking sheet. Garnish with sliced scallions before serving.

Q: Do some varieties of potatoes have less starch than others?

A: Yes! Idaho russet potatoes have a high starch content and are considered the ‘gold standard’ in the industry. Other varieties (reds, long whites and yellow) have a lower starch content and are known as ‘waxy’ types of potatoes. Different types of potatoes lend themselves to specific dishes. For example, Idaho russets are ideal for baked potatoes while Idaho red potatoes bring texture to skin-on roasted or mashed recipes.
